‘tWitch’ Boss who died from suicide earlier this week. He was an amazing person. Happily wed with 3 great kids. He will be mourned by many. I will miss seeing him dance. May he rest in peace.

It doesn’t always look like darkness
          Disheveled
          Discombobulated
          Sometimes it looks like dance
          Like joy
          Like syncopated rhythms
          Like grace
          Like choreography channelling
          Ancestor’s dreams
          Powerful
          Successful
          Enviable
          Sometimes we get so good
          At the act
          At the entertainment
          At wearing the mask
          That we can fool ourselves
          A little bit
          Long enough for the public
          To believe
          That we
          Have it all together
          That the airbrush portrait
          Is real
          The Instagram smile
          Is permanent
          The the steps aren’t automatic
          That happiness 24/7 isn’t toxic
          But the truth is
          Living is hard
          Lonely is real
Grief is too heavy to hold
          People don’t check
          On the strong friends
          The smiling friends
          The dancing friends
          The friends who look like
They are on top of the world
          Looks are often liars
          Hopelessness can grow
Like weeds in the most beautiful
          Garden
          It doesn’t always look like
          Darkness
And it’s so hard to say the words
          Out loud
          “I need help
          This is too much
I don’t want to try anymore”
          Because we clap for stunning
          Clap for the performance
          And ignore those in pain
It doesn’t always look like darkness
          Sometimes it just looks like
          Our reflection
          In the Mirror
          Sometimes it’s just too hard
          To stay in the light
If life feels like it is too much
          to take one more step
let someone hold your hand while you walk
          You aren’t alone
          You aren’t the only one
          I’ve had those thoughts too
          You are not alone
          I promise

In 2020 alone, the U.S. had one death by suicide about every 11 minutes—and for people aged 10-34 years, suicide is a leading cause of death.

“988” is the new, as of last month, three-digit, nationwide (USA) phone number to connect directly to the 988 Suicide and Crisis Lifeline. By calling or texting 988, you’ll connect with mental health professionals with the 988 Suicide and Crisis Lifeline, formerly known as the National Suicide Prevention Lifeline.

Veterans can press “1” after dialing 988 to connect directly to the Veterans Crisis Lifeline which serves our nation’s Veterans, service members, National Guard and Reserve members, and those who support them. For texts, Veterans should continue to text the Veterans Crisis Lifeline short code: 838255.

                        CREAMY BAKED POTATOES

                        Prep: 15 mins
                        Cook: 60 mins
                        Total: 75 mins
                        Servings: 8 to 10 servings

I used a mandoline to slice the potatoes, which made it very fast and easy to put this dish together.

                        Ingredients
                        Cooking spray
                        10 medium Yukon Gold potatoes, 3 1/2 to 3 3/4 pounds
                        2 cups heavy whipping cream
                        5 cloves garlic, minced
                        Kosher salt, to taste
Freshly ground black pepper, to taste
1 dash paprika (I use more than a dash. More like a light sprinkle over the top)

                        Directions:

Position a rack in the center of the oven and heat to 450 F/230 C. Spray a 3-quart baking pan with cooking spray.

Wash, peel, and cut potatoes into very thin slices using a sharp knife or a mandoline.

Lay the potatoes in the pan as shown in the picture.

Add the cream and minced garlic to the potatoes. Generously season with salt and pepper. To add some color, sprinkle some paprika on top.

Cover and bake for 45 minutes. Uncover and bake for another 15 minutes. The potatoes should be tender.

                        Recipe Variations
Add sautéed onions on top of the potatoes before baking.

Christine McVie, the longtime co-lead vocalist, keyboardist, and songwriter for Fleetwood Mac, died Wednesday, Nov. 30, at the age of 79. A cause of death was not available, but McVie’s family said she died at a hospital “following a short illness.”

The band confirmed McVie’s death in a note shared on social media. “There are no words to describe our sadness at the passing of Christine McVie. She was truly one-of-a-kind, special and talented beyond measure. She was the best musician anyone could have in their band and the best friend anyone could have in their life. We were so lucky to have a life with her. Individually and together, we cherished Christine deeply and are thankful for the amazing memories we have. She will be so very missed.”

On a personal note I have been a huge fan of FM and saw them live in concert many times, including the days when they were not headlining. I thank her for the music and for the joy. May she rest in peace. Fly free…

                            4 eggs
150 grams white sugar granulated or caster sugar
                            85 grams walnuts, finely chopped

                            8 tablespoons dried cherries
60 ml good red wine Cabernet Sauvignon or Pinot Noir work particularly well

                            EQUIPMENT
                            1-8 inch (21cm) square pan
                            1 small saucepan
                            1 wooden spoon
                            1 large saucepan
                            1 medium bowl
                            measuring cups or a scale
                            measuring spoons

                            INSTRUCTIONS
Preheat the oven to 325°F (160°C or 150°C for fan assisted ovens).
Grease an 8 inch (21 cm) square pan well with butter.
Put the dried cherries and the red wine into a small saucepan and heat over low heat until the cherries begin to absorb the wine and plump up. Set aside to cool a little.
Meanwhile, melt the butter and the chocolate together over very low heat in a large saucepan. Stir occasionally with a wooden spoon until the butter and the chocolate have just melted together.
Remove the saucepan from the heat and stir in the rum with a wooden spoon. Set aside to cool a little.
Beat the eggs and the sugar together in a medium bowl until light and fluffy.
Slowly add the eggs and sugar to the slightly cooled chocolate mixture in the large saucepan, stirring constantly.
Stir in the flour until well combined.
Add the cherries and the chopped nuts and stir in well. (The cherries should have soaked up all the red wine by now. However, if they haven’t and there is just a little left you can stir that into the batter with them.)
Scrape the batter into the prepared 8 inch square pan and bake in the oven for 20 to 25 minutes or until just cooked. The brownies should still be slightly squidgy in the centre.
Set aside to cool before cutting into the brownies squares and serving.

Tips for Making the Best Brownies
Use high-quality chocolate for the best flavour.
Consider using a non stick pan and always grease the pan well so that brownies are easy to remove.
Don’t over-bake the brownies. Most brownies will cook within 20 to 25 minutes. They should be a little soft in the middle for a lovely chewy texture.
Let the brownies cool completely before cutting into squares. This makes for a cleaner edge to each brownie. Also, you can carefully wipe the knife with a hot cloth between slices.
